IMHO, I think one of these should have made the list:
1. Lilium (Elfen Lied) - one of the few animes with a grave op; it doesn't hurt that the backbone is classical music and the graphic sequence is are Gustav Klimt's paintings.
2. Inner Universe or Rise (Ghost in the Shell: SAC)- It's one of the few techno songs that pulls off a very sexy vibe instead of the standard Jap emo. :)
3. 1/2 (Rurouni Kenshin)
4. Yakosuko wa Iranai (Vision of Escaflowne)
5. Platina (Card Captor Sakura)

If there's a super super jpop, I'd go for Bouken Desho Desho (Haruhi), Sakura Kiss (Ouran) or Let me be wit you (chobits) just for the music quality.

I love Evangelion, as I also grew up with that anime, but I have no love for the opening. It's too ordinary, imho.

Applause for you because that jazzy Cowboy Bebop is #1 and Baccano & Azumanga Daoih should be on every Best Anime themes. :D

FLCL and Cowboy Bebop = very good choices. The Bebop soundtracks never get old.
